Origin
Palakkad, Kerala. 100% organic coconut kernel (Cocos nucifera). Nothing else.
Method
Fresh kernel milled and cold-pressed within 24 hours of dehusking, then rested and filtered. Never dried, never heated.
Care
Store at room temperature. Solidifying below 24°C is expected — stand the jar in warm water to liquefy.
Made from the fresh white kernel of mature coconuts rather than dried copra, which is why it smells of coconut instead of smoke. It sets solid below about 24°C and turns clear again in the heat — both states are normal and neither affects the oil. Equally at home in a Kerala thoran, a morning coffee, or on your hair.
The seed is crushed slowly at a temperature that never rises above about 45°C. Industrial oil is extracted with heat and a chemical solvent, then bleached and deodorised to make it uniform. Cold-pressing skips all of that, which is why the oil keeps its colour, aroma and nutrients — and why it varies slightly from batch to batch.
That is unrefined oil behaving normally. Fine particles of the seed stay suspended and settle over time. Refined oils are filtered and chemically treated until nothing is left to settle. Give the bottle a gentle swirl before use.
A cool, dark cupboard with the cap closed tight. Keep it away from the stove — repeated heating and cooling shortens its life. Refrigeration is not needed and may cause harmless cloudiness.
Nine months from the date of pressing, printed on every bottle along with the batch number. Because there are no preservatives, we recommend using it within two months of opening.
Groundnuts from farms around Latur and sunflower from Solapur, both in Maharashtra. Every batch carries the number of the pressing lot, so we can trace it back to the source.
